Acetic acid is the main chemical in vinegar that is responsible for all of the miracle working. In a Japanese study, mice were given either vinegar (acetic acid) or water each day, while steadily eating a diet that was high in fat. The mice that received the vinegar actually developed up to 10% less body fat than the others.
Researchers believe that the acetic acid flips on genes in the body which produce proteins that aid in breaking down fats. This process prevents the accumulation of fat in the body and slows weight gain. Any recommendations for how much vinegar we should consume each day to fight weight gain are unclear.
